Before I get into sharing my favorite five minute summer salad recipe with you, I just wanted to take a moment to update you:
This has been one of the worst months of my life; trying to navigate my way through getting the *very* much needed care for my Son’s horrendous work injuries. I cannot go into much detail, as much to my dismay and disbelief, we had to hire an Attorney, to help us fight Workman’s Comp. What I can say is this: thank GOD I have been fighting and advocating for my own health for the past near decade; it served, somewhat, as a primer for all this. Second: last Monday, he FINALLY had surgery and has finally started on the *very* long road to recovery. I’m still destroyed and in awe over the barbaric and inhuman manner with which he was treated……I would never treat another human being the way he was treated.
Additionally: Thank you. I sincerely want to thank you all for the kind words, advice, encouragement and personal emails that I received from you. It kept me somewhat grounded, during such a terrible time, to remember that all of you are out there. But moreover, I was deeply touched by the love and support I felt from all of you, especially when my faith in folks was seriously in peril. It’s just one more way that this community shines and I could not be ANY more grateful to be part of it or to “know” all of you. ❤
Now without any more mushy adieu, here’s my actual post:
Let’s face it, eating healthy is hard. Fixing healthy meals, when you feel like death, is even harder. That’s why this is one of my favorite recipes. It is literally a five minute fix and has some really great nutritional power; never mind, it actually tastes good. Even for a super picky eater like me.
The best part? It’s only 6 ingredients and whips up super quick, with enough to make a couple meals!!
Stace’s 5 Minute, 6 Ingredient, Summer Salad:
- 1 medium to large cucumber
- 1-16 ounce package of cherry or grape tomatoes
- 1-8 ounce package of fresh mozzarella pearls (I use these because they’re quicker and easier)
- 2 teaspoons of oregano
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of apple cider vinegar
Cut the veggies into chunks, add all the ingredients together, gently toss and serve.
That’s it!! Although………I do dry the cheese off, out of the package and I do season to taste with a dash of salt and pepper…But I still maintain; super duper, lazily perfect, easy!
Here’s a pic of the mozzarella I use, but if you don’t want to spend the extra on the pre-cut, just use 8 ounces cut from the block.

It feels SO good to sit for five minutes. It feels even better to write a Blog Post. While my Son recovers and I try to preserve my health and sanity, I still cannot say how often I will be able to write. But I am hoping, enough so, to have some semblance of normalcy around here.
